DESCRIPTION: This excelso (medium sized beans) coffee is a wonderful representative of Colombia’s high-altitude coffee regions. It comes from a collection of small family producers who cultivate their coffee at impressive altitudes ranging from 1,750 to 2,100 meters above sea level. Growing in rich volcanic loam soil, this lot is a blend of traditional varieties such as Caturra, Castillo, and Typica, which contribute to its classic and balanced profile. As an EP (European Preparation) coffee, it has been meticulously hand-selected to eliminate defects, guaranteeing an exceptionally clean cup and uniformly sized beans that facilitate even roasting.

This lot is not only grown without chemicals, but also is certified to be shade-grown under a diverse, native shade canopy, creating a healthy ecosystem that serves as a vital sanctuary for migratory birds. This “forest cultivation” method also allows the cherries to ripen more slowly, developing greater complexity and sweetness in the bean.

TASTING NOTES: A nice, clean cup, tasty from medium to dark roasts. Fuller-bodied cup with some pleasant acidity. Classic Colombian, toasted walnut, and baker’s chocolate-like darker tones co-mingle with soft acidity and medium sweetness. Medium roasts accentuate the semi-sweet, thicker, nutty/walnut-like tones with a little spice in the aftertaste, still has a gentle brightness upfront, but brings nice balance and a little sweeter edge to the cup. Darker roasts accentuate the semi-sweet tones, turns a bit roasty tasting, but works with its fuller body, with a creamy mouthfeel, a good roast point if you use a splash of cream.
